60 days. Tetragonia tetragonoides. Not really spinach, but a more heat tolerant spinach substitute. The leaves taste a lot like spinach and it can be used in much the same way. As the spring spinach is petering out, New Zealand spinach hits its stride and continues through the summer and into the fall. The plants are larger than spinach. Final spacing should be 8 to 12 inches apart, but germination is poor so plant heavily and thin out as they grow. Soak the seeds overnight before planting to speed germination, or start indoors a few weeks before last frost.
